type='text'>最心浮氣燥的時候，發洩的，不是口袋裡的信用卡，也不是肚袋裡的五臟腑，而是那無辜辜的熱狗巴士 --只有熱狗巴，才能奏出那觸動我心靈的樂章。還是以巴士出入的時候，只要有路線有熱狗巴士，便會一而再，再而等，等那可能要在三五七架冷氣巴之後才會有機會出現的熱狗巴。不管等的過程有多酷熱，只要一躍熱狗上層，開車時風一吹… 呼… 悶氣自然會一掃而空。 若干年後的今日，我終於再次坐到熱狗巴上。無端灑下過雲雨後，窗外竟帶有點涼意。看著乘客一個一個的湧上來，又看著乘客一個一個的走下去，那種感覺，竟然像坐在家中的沙發，拿著電視的遙控器，漫無目的地看著 fast forward 的畫面…其實，這程巴士河是莫須有的：我可以選擇在中途落車，我更可以選擇往別的地方；可是，我卻選擇了在熱狗巴士上發呆。因為，我聽不到人聲 -- type='text'>踩過界的「食評」-- 食之影評：《五星級大鼠》（香港） （Ratatouille : Rat-a-too-ee（國際）/ 料理鼠王（中國 / 台灣））被喻為歷年來彼思（Pixar）出品最好的動畫片。故事是有關一隻食知其味的老鼠（Remy），遇上一名不懂煮更不懂吃的闊條麵（Linguini），結果「鼠人合一」，為尖酸刻薄的食評家梵高深（Anton 第一次瘋狂鐵道之旅，源於某日齒舌間剎那間的感動。初到喬遷後的新店，「老許」清潔、美觀得有點怕人。原址是在「文八座」-- 油麻地/佐敦渡船角（文苑街、文匯街、文英街一帶）的唐樓，是越南僑民的聚居地之一「水晶皮扎肉卷」，即扎肉米紙卷。米紙（banh trang，炸春卷的叫 banh da nem）包的扎肉卷，包著青翠的萵苣，半透明、具彈性的檬粉（Pho），還有花生米…初見其形，濕度剛好；握在手中，全不黐手；初試其味…香菜葉（九層塔？）、薄荷葉的芳香四溢，加上扎肉、金蒜的輕輕點綴，奇味輕描淡寫的道出來…那不就是在河內蹲在街頭吃的那條紙包春卷嗎？呷一口魚露，霎時如夢初醒：這才不是河內呢 -- nuoc nam type='text'>想吃蟹黃，又想吃麵，也湊熱鬧。「蟹粉煨麵」，季節限定之貨色也。除了蟹粉和大白菜，湯底應該是用一整煲雞骨熬過，濃濃稠稠的。當然，曾有最壞打算，會吃到「集百蟹之大乘」、良莠不齊的蟹粉碎，但端來的煨麵，（蟹）油光泛泛，煞是迷人。淺嘗一口，可幸蟹粉尚算新拆，蟹肉仍有實感，滿意。煨麵，即是用高湯慢火煮的麵條。雖然這樣做會令麵條偏腍，但這樣做，不單令食材的精華毫不保留的散發出來，且麵條又把高湯的精華毫不保留的盡收於底…爽透了。如果連蟹真的也駕馭得不好，該愧為「上海點心狀元」吧…當然，掛念的，仍是上海的總店。王家沙 type='text'>原本「聯記漢堡包」的位置，變成「聯記川王」。外賣紙是寫「聯記川王濃湯米線」的，但門面卻寫「聯記川王米涼粉」「聯記川王」基本上是一個小食卡，放了兩張摺檯在旁邊。賣的，是誘人的、老闆娘大鑊即炒的四川麻辣小吃：口水雞、龍抄手、夫妻肺片…最教人樂道的，還是幾乎在香港未見的四川涼粉： 涼拌米涼粉四川涼粉，一般分為三種：白涼粉（豌豆做的，但老闆則說用「邊豆」做的）、米涼粉（大米做）和片粉（綠豆做）。川北涼粉吃的，基本上是四川涼粉最基本的食法。「川北涼粉」用上的是切成條狀的白涼粉，用香蔥、蒜泥、醬油、糖、花椒，還有老闆娘即炒的紅油拌食。而「涼拌米涼粉」呢，則把米涼粉切成方塊狀（如廣東用涼粉草開的涼粉一樣大小），飛一飛水後，以同樣（但老闆娘另外再炒的）花椒紅油來拌食。四川涼粉不像廣東涼粉爽爽QQ的口感，但大熱天時來一口麻辣，感覺爽多了。話說開來，還是頭一次在香港吃到那麼多的花椒麻粉。</summary><link type='text'>來，正正經經的還大家一個食評好了。這碗不經眼的叉燒飯，流落在電車路的一旁。此時飯市已過，端來的，仍然是碗熱騰騰的白米飯，煞是感動。叉燒是無火雞（黑焦）、軟帶濕潤的那種；被勻稱地鋪在軟熟的熱飯之上。淺嘗一口，叉燒仍是暖的（不是被熱飯烘熱的那種暖，是真真正正的由內至外散播出來的熱力），肉汁仍是有的，汁亦並不是甜的。 type='text'>有問：為什麼Q開二釐館，十之有九均與茶餐廳冰室無關的呢？Q其實是一個「鴛不離手」的人，若然Q天天也寫舊式茶餐廳的話，恐怕Q未寫厭，大家先看膩。廣東話中的鴛鴦的「鴛」，跟「煙」近音Q亦曾經發過毒誓，寫茶餐廳，除非寫「外傳」，就只會寫「舊到癲」的那些。 今天寫的，不單是「舊到癲」，更是「舊到 short」：廣東話的 short，比「癲」更甚西環尾的堅尼地城，因香港第七任港督堅尼地（Arthur Edward Kennedy，舊稱堅彌地）任內所填的一片地而得名。連西上環一帶，為香港開埠初期最多華人聚居的地方（那時已經算是發放到邊疆了）；又因其位置狹長而較市中心（CBD，即政經中心命脈）偏遠，因此發展得比較緩慢，焚化爐﹑水泥廠﹑工廠、廢物處理中心等相繼在此興建。 type='text'>材料：牛尾一盒（約五~六塊）開到夠期的紅酒一枝胡蘿蔔一條馬鈴薯一個洋蔥兩個茄膏一湯匙製法：（一）先把牛尾洗淨，用紅酒浸一個晚上（紅酒須覆蓋牛尾）；（二）各材料洗淨備用；（三）胡蘿蔔、馬鈴薯切件（三角形）、洋蔥切絲；（四）起鑊把洋蔥炒香，煎一煎胡蘿蔔、馬鈴薯；（五）把所有材料同置煲內，以猛火煮 20-30 分鐘，再轉細火燜 1-2 小時。後記：（一）事出一枝「過氣」紅酒才弄此味；如平日製作，用廉價的紅酒就可以（二）如想弄「健康版」的紅酒燴牛尾，有以下幾項可看看是否合用．一日前先白烚牛尾，置涼後牛油（牛的油）會浮面（容易去油）．可改用橄欖油，但鑊不能太熱．用蕃茄（兩至三隻）加鹽花而棄茄膏（但賣相會糊一點）（三）想吃啖啖洋蔥，可只把洋蔥切半（食譜中洋蔥經燜煮後已溶掉了~）（四）熄火後焗 15~20 山東大包（前）、山東素包（後）山東大包在香港比較可以吃到的機會比較少：工序比較多，價錢賣不高，且會吃的比較少。印象中只有鹿鳴春和泰豐廔會弄（還有一間在銅鑼灣的，可是忘了），還要預訂才有得吃。 breakfast、一個很標準的「常餐」（前菜、主菜、甜品）…就連主菜也來一個鐵三角（肉、薯、菜）。其實早餐也是不礙乎肉薯菜再加多一份肉薯菜，那…早餐即謂「常餐」，但常餐又不及早餐。 英式早餐，份量之巨，份量之多，蛋之變化，多（士）之變化，難怪一天只能吃一餐，一天情願吃這餐 -- All-day breakfast type='text'>不知何時，鳥結糖（Nougat）變成「悉尼手信」。（悉尼又好，雪梨又好，別正字了…哈！）Q字頭的土炮由始至終都覺得兩者風馬牛不相干，「大纜都扯唔埋」…直至發現「悉尼手信」原來是「悉尼（唐人街）手信」。「鳥結糖」並不是「了結糖」（廣東話同音），只是「扭結糖」的美名。鳥結糖，國內又稱「牛軋糖」，「相傳」是中國「發明」的。其實啥發明不發明的，每一個地方總會有相似而不盡同的產品吧…別來那一套「中國歷史源遠流長」了。（雖然Q非常重視祖國文化！）言歸正傳，國內的牛軋糖，相傳是明朝舉人商輅把有麥芽糖、花生、米殼等的捏成牛的形狀而得名；單憑這點…似乎這個（根本）沒有牛奶的牛軋糖，跟香港人熟悉、有牛奶的鳥結糖不相同。（似乎國產「大白兔」還較近似些）現在的鳥結糖，通常切成條狀，包裝時先裹一層米紙，方便進食。好吃的「鳥結糖」，可以有很多：澳門的 type='text'>在奇香冰室、勝利小廚的另一方，以前夏銘記的位置，有這間小店。看著它裝修，看著它試業，也看著它成長 -- 看著它的成功，也真替它高興。 一如圖中所見，店子窗明几淨。週日早上來光顧的，不是鄰里街坊，便是教會教友。 端來的健康早餐，是「凍鮮奶高纖燕麥」。熱燕麥同凍燕麥的分別，除了「熱鮮奶高纖燕麥」其實是熱的牛奶麥皮之外，凍的會配即食乾果。這裡用的都不是次貨：麥皮、麥條新鮮之餘，乾果中還混有片片椰子的薄片 -- 一種港式穀麥早餐中（現在）比較少見的食材（反而美加那邊的 museli 則非常普遍）。另附的健康餐包，是甘筍包：胡蘿蔔一粒一粒的，很實在。 跟餐的美式咖啡是即研的：雖水份比例較多，還可以接受 -- type='text'>買手信，食落肚最實際。要買香港（好大機會）買不到的手信，有幾個竅門：1. （當然是）去偏門的地方；2. 去不是為遊客而設的店子，如民用菜市場、魚市場、民營小商店（如香港辦館的那種）等；除了可以買到當地日用的東東外，價格也相對比百貨公司的便宜；3. 不用買而又可以當手信的，是各車站（駅）的時間表（時刻表）、車票套（各站不同）和全國各地的旅遊紀念印（這三者均地區限定！）；4. 要買「地區限定」、「季節限定」的產品；有一點要注意的：「北海道限定」跟「北海道特產」不同 -- 日本貨物上使用「限定」是有限制的，所以「北海道限定」基本上只有在北海道區內有售，而「北海道特產」則在全國（甚至國外）有售；可是，近日吉之島的「沖繩食品展」卻打破了先例…現在要買「日本限定」的東西似乎（更）難上加難…5. type='text'>銀絲卷銀絲卷，應該跟「千絲萬縷」有千絲萬縷的關係吧。從小，小Q已開始每事問，尤其是銀絲卷：「銀絲卷是怎樣來的？」「銀絲卷是怎麼樣的？」「銀絲卷的銀絲在哪？」「銀絲是用甚麼做的？」…漸漸的，人人未見小Q背影，已先逃之夭夭。為平息風波，Q媽從超級市場買了一盒「利川」出品的銀絲卷；一切，與普通白饅頭無異。（正是香港利川湯丸的那「利川食品有限公司」；除湯圓外，另生產冷凍的蓮蓉包、麻蓉包、叉燒包、奶皇包…）小Q好生失望。從此，小Q不斷地「打爛沙盆問到篤」，發揮問不到篤誓不罷休的精神 type='text'>在台灣覬著的四天，只有在台北邊郊的九份才真正地引起我的興趣。九份，位於台灣台北縣東北部，環山面海。九份那一帶的天氣，總是天沈沈雨濛濛的，若能碰到極好的天氣，大概是極少數。九份「九份」，是因以前住下九戶人家，因貨船運送貨物時習慣把貨物分成九份，而得其名（唉，就是因為事前沒做功課，把它和另一處想到的「十份瀑布」搞在一起了）。九份於光緒年間被挖得金礦後，成為台灣的採金中心，得了「小香港」的美名，但因掏金熱的逝去，九份亦因此一度被遺忘。近年，因電影劇的取景、電視台的報道，已漸變身成旅遊區。已開發為旅遊區的九份，當然知道有可能要面對的種種 type='text'>到香港的潮州菜，以「打冷」的變化型面世。打冷的「冷」，讀作廣東話「毛冷」的「冷」，與潮州話「人」同音 -- 「冷」字在此只意指潮州食品。而打冷的「打」，則是指到飯店吃飯，源出宋元文史中的「打尖」、「打店」（另潮州幫中的「趙」姓，相信跟宋家皇朝的趙姓同出一源）。不同到潮州餐館吃「九大碗」（同「九鬥碗」/「九大簋」），「打冷」比較特定吃潮州小食；與手工潮州菜不同，「打冷」比較 term='western.GO'/><title type='text'>褪色中的回憶：巴黎咖啡店</title><summary type='text'>巴黎咖啡店，誠而是香港上樓咖啡店的鼻祖。認識巴黎咖啡店，是若干年前的一個午後 -- 那時閣樓咖啡店（香港稱之為「上樓 Cafe」）在香港仍是一個很新的概念。一年後，再訪銅鑼灣渣甸街的巴黎咖啡店，已人面全非 -- 食物如是，氣氛如是。那時，樓上咖啡店漸漸普及，大大少少的 巴黎咖啡店如雨後春筍般盛放。不知是香港一般中小企業發展的趨勢固有模式，抑或學生的錢太易掙，香港大部份的上樓咖啡店，由原本繁囂鬧市中的一片綠洲，變中小學生三五知己的另類廉價玩樂場所。不消三五七年，香港樓上咖啡店已「成熟」得可以發展一獨立聯網。自此，便鮮有造訪樓上咖啡店，除了今天 --這間巴黎咖啡店應該是香港最大的，竟拾回昔日首次造訪的味道：由於香港的巴黎咖啡店是以特許經營的商業模式運作，所以即或叫客同名的「藍草莓窩夫夾餅」，也可以有意想不到的款式（可能是克戟，可能是小窩夫，有可能是大窩夫…可能是冰鮮藍莓，也可能只是藍莓醬…）</summary><link rel='replies' type='application/atom+xml' type='text'>[Spoiler]相片由下列「單位」獨家提供…等轉車的期間滯在函館。函館（はこだて），又作「箱館」，位於日本北海道南部（道南）。函館當然以其函館山夜景聞名於世（既是日本三大夜景（還有神戶和長崎），亦是世界三大夜景之一；在步距之內的，還有元町、五稜郭的箱館戰場、金森紅磚倉庫群（金森赤レンガ倉庫）和站前的函館朝市。是因寶貝傻瓜機的關係，所有食物 / 室內照片欠奉。最難以忘懷的，還是那個函館朝市．いくら亭的「朝市飯」。朝市飯並不是指朝早才能吃的飯，而是那個丼物可以盛當地魚市場（通常也是朝市）盛產的海產。來到函館，沒有理由不吃這裡盛產且用「函館限定」（醬油）製法的墨魚（いか/イカ）、いくら亭的鮭魚卵/三文魚子（いくら），和北海道盛產的海膽（うに）：魚油飛瀉的魚子、肥美圓潤的海膽、剔透墨魚的爽脆…仍常在我心在香港，暖的魚生飯實在不敢吃；在日本，暖的朝市飯實在不能不吃。沒有照片的朝市飯，是最惹人暇想</summary><link type='text'>熟悉這個地段的朋友，會知道這裡有兩家打對台的「沾仔記」（離遠還有一家豪裝的「沾仔記」）。路過時，發現這裡其中一間（個人覺得不大就腳且比較遜的一間），變成「我的家鄉餃子」。店子著實沒甚的裝潢 -- 潔白的牆身、簡單得可以的（電子）煮食爐頭、數張摺檯摺櫈…又一家庭小店。餃子（又或角子、扁食），中國北方傳統食物之一，通常以水餃、蒸餃兩法而食。這裡只做四款餃子，分別是韮菜、白菜、香茜和椰菜木耳：這裡的餃子皮很薄，略帶透明，竟有小許咬勁，相信是手擀的；餡的味道較淡，多菜少肉，除了熟菜有的爽外，整體的口感比較軟而無力；清清淡淡的，果真「家鄉餃子」。最欣賞的，是手工餃子大小均稱，呈彎月形，亦有「捏福」的兆頭；「乾水」的餃子，排得整整齊齊，絕不馬虎。名堂得意的，還有款叫「試吓先」的湯餃子（即放湯的雜錦餃子 可惜，是日日休。在以為自己錯過貍面寇依（貍小路）的札幌ラーメン横丁（さっぽろラーメンよこちょう）的時候，鑽入此店 --札幌拉麵橫丁，分「元祖ラーメン横丁」（南5条西3丁目）和「新ラーメン横丁」（南4条西3丁目），聚集了不同的拉麵小店，每一家都有獨特的湯底和口味。 每每把黑白淡奶沖的咖啡/奶茶/鴛鴦提到嘴邊的時候，總是在半空住了手，猶疑半刻，嘆口氣，又徐徐的把它放下來。但從未試過對著沏得不好的茶如斯猶疑過。是我對茶餐廳太執著吧。又或者杯中物並不是留戀的對象吧。瞥見水吧上架著一罐罐、活像「生招牌」般的黑白淡奶…還是別過頭，研究玻璃門眉上洋洋灑灑的四個大字吧。叫的「烘底鮮茄牛肉三文治」，莫名奇妙的變成「烘底鮮茄鹹牛肉三文治」，不禁噠咕：雖然醉翁之意不在酒，但… type='text'>第一次來，發誓下一次不要辣。第二次來，竟信守諾言沒要辣。「秘製羊肉麵」的麵、料分上；跟海南東山羊相似-骨碎，但柱侯、腐乳十足，化骨而入味；教人津津樂道的，是塊縮哂既冬菇，同撈完汁食既麵。山東麵跟其他麵不同：如果要求它如四海魚旦咁彈，或者北方拉麵咁柔韌之類，根本是強人所難 - term='learn.chinese'/><title type='text'>至補三鞭牛：明興牛什粉麵</title><summary type='text'>唔好意思，請由右至左讀。「牛三寶」不再是悶蛋的牛腩、牛肚、牛根，而是牛鞭、牛寶丹同牛脆骨：牛鞭同平日食的不同，一點也不爽，腍腍的…的確比較像硬身的牛筋（若不 是中間發白的話）；牛寶丹（或者牛春袋，又或者牛睪丸）切片 - 像很 蘭州人食麵有「一清、二白、三紅、四綠（甚至五黃）」，即「湯底清、蘿蔔白、辣椒紅，蔥花綠（同麵條黃） 」的準則；五香牛肉撈麵，未能一嘗其一清二白，不過青瓜絲跟胡蘿蔔絲切得纖長、幼細分明，跟纖幼的麵條撈在一塊吃，應該十分匹配、滋味非常…正在撈吓撈吓、搞吓搞吓之際，老闆娘似乎察覺我「神色有異」，閃過來，用唔鹹唔淡既廣東話問我 ：「你做乜猶疑唔落辣油呀？」「猶疑」二字，好有「威脅性」：我的確在想，先試原味，後試辣味。老闆拉了最 standard 的「三細」：粉團應該雪過，失去「好彈」的感覺（幸仍有少少彈…），絕對情有可原 - 一來兩地天氣有異，就算不雪入雪櫃，就算用上同樣的粉，酵性、筋性已經截然不同 - -因為，它就是瑟縮在天橋底下，任何人下意識都不會直望的當眼處。都那麼多年了，依舊那麼簡單，依舊那麼直截了當：包餐、麵餐，熱飲、凍飲…一目了然。漢堡包的味道，依舊那麼簡樸：肉依舊傳來牛肉香，但依舊食到絞豬肉、 雞肉同黑椒的口感；麵包雖是來貨，但煎一煎，烘一烘，加上有青瓜粒、胡蘿蔔粒、茄汁的醬汁，風味依然，神態依舊。還是五、六十年代，此處實為海旁（對，紅館、紅隧同大部份黃埔也是填出來的），亦是黃埔船塢（又「九龍船塢」）的出入口（所以叫「黃埔街」同「船塢街」），它理所當然的萬千寵愛在一身。時移世易：修理廠、石屎廠沒有了；人去，樓空了；旺區，也成舊區了…它，竟奇蹟生還了。心想，若不是有老街坊老顧客支持，若不實為自己地舖，它哪可能撐下去？至少，有這樣的生存意志，足以是「香港第一」。倘若你覺得到「大酒店」</summary><link
